15 Minute Chicken Veggie Soup
Looking for a quick, warm, healthy meal? Here is a recipe for a single serving chicken and veggie soup that is very tasty!
Over the weekend, my husband and I threw six chicken breast in the crock pot for about 6 hours, shredded it, and now we have our protein prepped for the week! (Check out my post on Facebook about it). For this soup, I used the veggies we had in our fridge, some spices and a splash of apple cider vinegar. It was a warm, light, flavorful lunch on a cold, rainy day.
For those of you following along to my 12 Days of Fitmas, this meal would get your 1 serving of protein and two fists of veggies in one meal!
Chicken Veggie Soup
5oz. shredded crock pot chicken
1 carrot, chopped
1 stalk of celery, chopped
1/8 of a head of red cabbage (look at the beautiful purple broth!)
onion to taste, chopped
1 head of garlic, chopped
mushrooms, to taste
frozen peas, to taste
handful of power greens
pepper, to taste
Penzey’s Sunny Paris, to taste
equal parts chicken broth and water (amount dependent on how much broth you want)
splash of raw apple cider vinegar
Place all ingredients, beginning with onion and garlic, in a pot over low/medium heat, cover, and let sit for 8-10 minutes. Serve and enjoy!
